B.R. COHN Balsamic Vinegar of Modena
First created almost a thousand years ago, balsamic vinegar is prized throughout the world. To make it, the juice of selected Trebbiano grapes is simmered in a copper pot until it is reduced to 40% of its original weight. The resulting must is aged for 12 years in a succession of small oak, cherry, mulberry, chestnut and juniper wood barrels, producing a complex and rich balance of sweet and sour flavors.
B.R. Cohn imports the highest quality balsamic vinegar from Modena, in northern Italy - a true 12 year aged balsamic - and bottles it in California. The lengthy aging process gives this vinegar its characteristic dark color, viscous texture and balance of sweet and tart with a touch of acidity.

How to use it:
Balsamic's sweet-tart flavor enhances most dishes. Combine with B.R.Cohn's California Certified Organic Extra Virgin Olive Oil to make an outstanding dipping oil or vinaigrette. Use it in marinades, and blend a small amount with other vinegars to add complexity to vinaigrettes. Sprinkle on grilled or roasted vegetables right after cooking.
